BBQ Corn
Ingredients:
10 ears fresh corn on the cob
1-quart inexpensive beer
Bagged ice to cover
Directions:
1. Place corn in an ice chest or big cooking pot; remember to
leave the husks on the ears. Pour beer over top. Cover with bagged ice. Set
aside overnight.
2. Preheat smoker to 250 degrees F (120 degrees C).
3. Place corn on racks, and stack racks in smoker. Cook for 1
to 2 hours, turning every 20 minutes or so. Kernels should give easily under
pressure when done.
Makes 10 ears corn
Mexican Corn On The Cob
Ingredients:
Your desired amount of fresh corn on the cob
Mayonnaise
Chile Powder
Water
Directions:
1. Place corn in a cooking pan, sized for the desired amount
of corn and add water.
2. Boil the corn until done.
3. Spread mayonnaise on corn
4. Sprinkle with Chile Powder. Remember, the more the hotter
5. Eat and enjoy a Real Mexican Treat.
Green
and Red Tomato and Corn Soup
Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
1 clove garlic, minced
1 1/2 teaspoons ground cumin
4 green tomatoes, chopped
3 ripe red tomatoes, chopped
1 1/2 cups fresh corn kernels
6 to 8 cups vegetable broth
Salt and pepper to taste
Directions:
1. In a stockpot heat the oil over medium heat. Add the onion
and garlic, sauté until soft.
2. Stir in the cumin powder, tomatoes and corn. Cook over
medium heat for 5 minutes.
3. Stir in vegetable broth, reduce heat to low and cook until
heated through. Season to taste with salt and pepper.
Makes 4 to 6 servings
