Selecting the Best

Quality sweet corn has large full formed ears and the kernels are nice and even. The silky fiber should be fresh and the kernels should be nice and shiny. Avoid corn that has burned and shriveled husk. Avoid corn where there is no juice in the kernels and that lack good color. The kernels should squirt a slightly clouded juice when poked.

Sweet Corn is available from California, Washington, Florida and Texas. Sweet Corn is available year-round. California sweet corn season is from Mid-May until October.
